Shrimp Ceviche
Serves 8

1 lb of Desert Sweet Shrimp
6-8 Lemons (Juice of Lemons)
1 lb Tomatoes - 1/4 Inch Diced
1/4 Cup of Celery - Finely Diced
1 or 2 Jalapenos - Small Diced
1/2 Cup of Red Onion - Finely Diced  
2 Tablespoons Minced Garlic
2 Tablespoons Chopped Cilantro
1/4 Teaspoon Black Pepper
1 Tablespoon Salt

Thaw shrimp under cool running water, drop into boiling water for 1-2 minutes.
Place in ice water, remove and mince.
Mix the above ingredients and chill for 3-4 hours before serving.
Goes great with fresh corn chips or on a tostada shell topped with sliced avocado.
